Spring is here without a doubt, and maybe even shades of summer. As we head to the coast for a kite festival (granted, it's going to be 15 degrees warmer here in the valley than over there), I'm packing some home made cheese spread for our sandwiches.

Sinfully good: Queso Frito

That's right: fried cheese. Choose a somewhat dry, slow melting Hispanic cheese such as Queso Blanco or Queso Fresca. There is supposedly a Queso De Freir, but it's apparently not common here. I used Fresca found at Winco.
Slice it into slabs about 1/4 inch thick. Lightly coat in cornstarch. Place about 1/8 inch of vegetable oil onto a frying pan, heat it to about 300 and gently lay in the slabs of cheese. Fry until brown, flip over and fry the other side. Pull out of the pan and place onto a cooling rack w/ paper towel under it.
Sinfully delicious.
I plan to use little cubes of it on taco salads. Or in enchiladas. Or... on a fork in my mouth.
Apparently, it's a staple of Dominican breakfasts. I could handle that. It's also a big hit with the Atkins crowd thanks to it's low carb nature.
